Volume 01: Whole Grain Brown Rice
The first macrobiotic recipe I want you to try has to be brown rice! Whole grain brown rice, genmai in Japanese, is rich in minerals and vitamins, and so flavorful you won't need any side dishes.Unlike processed white rice, whole grain rice is still alive and full of energy!

The best way to cook your whole grain rice is with a pressure cooker.
Whole grain rice has valuable detoxifying properties. It is also Mother Nature's secret weapon against constipation.
Whole grain rice – 500ml
Water – 600ml (The rice should be soaked from 30 minutes – 1hour)
Salt – A Dash (Salt raises the boiling point, and makes the rice sweeter and more flavorful.) Be sure to use unrefined sea-salt. The salt should not have been boiled for long periods during processing.
How to cook whole grain rice in a pressure cooker
- Put whole grain rice and water in a pressure cooker.
- And cover the pressure cooker.
Pressure is applied. (Please read the instruction manual of your pressure cooker for pressure display method.)
- There should be no liquid on the bottom of the pot, with a slight bit of scorch for flavor, and the rice swollen enough to leave space between the grains. The traditional way to make rice was to add a bit of firewood to raise the heat before extinguishing the fire. Allow the pressure to release naturally, (about 10 minutes.)
